Yet another trip up to the cabin. Seriously that’s what we wanted, a place we could drive too and get away. Of course the idea was to relax also, but not yet. Not for awhile. However, progress is moving along nicely. Our neighbor Jeff has been busy keeping up with my whims. It’s starting to form into what it will be. As I type this, Jeff is probably done with the drywall and ready to paint it for us. I snapped a few photos so you could see the progress too. Actually, its just so darn exciting I can’t help but share!
The skylight and stack for the bathroom is up, and so is the chimney.
The downstairs is framed in with some drywall. Summer dog found a spot next to our composting toilet.
Under the house is the actually composting bin, very green of us, I think.
Poor Jeff had a heck of a time laying the cement slab, there’s a reason why it’s called the Rocky Mountains.
A view through the sliding glass doors which was supposed to be our bedroom but we had to alter our plans a bit so now it’s the kitchen.
On the deck is the cabinets I finished myself (you can’t tell, but I distressed them and they look old and antiquey), plus the cabinet counter.
Upstairs is more finished. Because we moved our bedroom to the upstairs we had Jeff punch a hole for a window.
The cut out alcove is to be the closet.
The other side looking out on to the deck is sitting room/extra bedroom.
On the deck is our water tank which will fit into the alcove in the sitting room. For now we’ll have to bring water in and use gravity drain for downstairs.
McGyver felt bad about my hokey cowboy grill we made last time so for our anniversary he bought me a real no kidding cowboy grill and the Baby boy assembled it for me.
Because I had 3 young men to feed in addition to myself and McGyver I decided to make something fun for dinner.
I had been craving a bacon cheeseburger forever!
But my guys were drooling over the prospect of hot dogs. This got my little pee brain a working.
Yes, I can have a bacon cheeseburger in essence, I just needed to turn my hot dog into one.
Abracadabra…..Not a bacon cheeseburger but a bacon cheese dog!
Ingredients
2 packages (16 dogs) of all beef cheddar dogs
1 lb thick sliced bacon
2 packages hot dog buns
Sauce
equal parts mayonaisse and ketchup, add desired amount of finely diced dill pickle.
Toppings
Shredded lettuce
Diced tomatoes
Diced onions.
Directions
Mix up the sauce and set aside.
Wrap bacon around hot dogs and grill.
Watch the dogs closely, especially when cooking over a wood fire.
Or this will happen (it was still delicious!).
I cooked up some beans to go along side, it only seemed right.

I love to see it when my boys are actually helping each other, it warms my heart.
For breakfast I made us breakfast quesadillas.
I cooked the eggs at home and packed them. I also pre-prepared onion, red pepper, mushrooms and cilantro.
I cooked some bacon so I’d have a little fat in the pan.
Throw all the ingredients on a tortilla, add some cheese. Cook and flip.
A perfect all in one breakfast.
The morning light is so beautiful on the wildflowers growing.
Seems like a trip isn’t complete without the usual suspects.

Oh my…3 boys. how did you cope???? I have 2 girls and 1 boy (who is like having 2 girls), so in essence I have 4 kids :-). The cabin is coming along nicely..good job!
